Fresh Pasta Sauce

1/3 cup olive oil
1 1/2 cups chopped onion
1 clove garlic crushed
1 can (2 lbs 1 oz) Italian tomatoes undrained or 4 cups fresh tomatoes pureed in food processor
1 can (6 oz) tomato paste
2 T chopped parsley
1 T salt
1 tsp. oregano
1 tsp Basil
1/4 tsp. pepper
1 lbs sausage (optional)
In hot oil saute onion and garlic for 5 minutes. Mix in the rest of ingredients plus 1 1/2 c water, mash tomatoes, if needed. Bring to boil; reduce heat and simmer, covered, stirring occasionally for 1 hour.
