Toffee

½ cup sugar

½ cup salted butter

Heat an empty sauce pan on high, add butter and sugar, whisk until melted. Keep mixture on high the entire process and whisk until it starts to bubble a bit. Whisk for 3 seconds…pause for 3 seconds, the mixture will expand. Whisk again for 3 seconds or so until the mixture deflates. Repeat this until the mixture separates (it looks like brains) and then turns brown. The best way to describe the color is “paper bag brown”. The mixture should be somewhat creamy. Quickly pour onto cookie sheet. Add Hershey’s chocolate bars (broken into pieces) on top of the sugar mixture. The thin bars work best. The chocolate will start to melt. Spread with a butter knife. Add chopped pecans.
